Fibro Fridays~Shoulda Known Better

 

This week, I had planned to tell you about my experience with a product called Thrive. However, I was sidelined with a Fibro Flare, brought on by a combination of things ... the weather (it's been raining for NINE days and we are forecast to have rain throughout the entire next week! Thank you, Joaquin ... ), my eagerness to get my ducks in a row so to speak and just being plain out stupid ...

On Monday, I began cleaning my house. Something I haven't done on my own for months. Tanya and the Witchling have moved out and back in with Ed Jr. Even though she is cleaning as she removes her belongings, I "claimed my space" again. I dusted the living room, the master bedroom, vacuumed the hallway, living room, and master bedroom and swept the floors in the dining room and kitchen. While doing four loads of laundry at the same time. And cooking dinner cause Jimmy was able to come home for a 10-hour break.

I've been paying for that burst of energy and idiocy ever since. I've got the stiff and sore muscles, achy joints and a constant mild headache that is just annoying. Yes, I "should" have known better. Unfortunately, I am pigheaded and stubborn. So, I've been moving slow, resting a lot and doing as little as I have to in order to allow my body to recuperate after being such a dumb ass.

So, this week I don't have anything for you other than this recipe that I've been dying to try. I'll get to it eventually, just not this week or maybe not even next week ...*sigh*. The very first time Jimmy took me to Vermont was in late September. OMG! All the new and amazing things I experienced, one of the things I remember is the Apple Cider Donuts. I've been searching everywhere for a gluten free recipe to make here at home and I found one on Pinterest (my new addiction!). You can find the website here. Apple Cider Glazed Donuts {Gluten Free}


1 1/2 cups gluten-free all-purpose flour

1 tsp baking powder

1 tsp cinnamon

1/2 tsp baking soda

1/2 tsp nutmeg

1/4 tsp salt

1/2 cup applesauce (optional substitution: 2 very ripe bananas or 1/2 cup pumpkin puree)

1-6 oz container So Delicious Dairy Free Cultured almond milk or coconut milk yogurt, vanilla flavor

1/3 cup apple cider

3 Tbsp coconut oil melted

2 Tbsp maple syrup

1/2 tsp vanilla extract

Glaze:

1 1/2 cups powdered sugar

3 Tbsp apple cider

pinch of salt

Preheat oven to 350 degrees. Spray a donut pan with non-stick cooking spray; set aside.    In a medium bowl, whisk together the flour, flaxseed, baking powder, cinnamon, baking soda, and salt.

In a large mixing bowl, combine the applesauce, yogurt, coconut oil, maple syrup, and vanilla. Gradually mix the dry ingredients in and mix until just combined.

Spoon batter into a piping bag and pipe evenly into a donut pan. Bake for 10-12 minutes or until set and the tops are just beginning to brown. Allow donuts to cool.

Whisk together the powdered sugar, apple cider and salt in a small bowl. When donuts are cooled, dip the tops into the glaze, allow the excess to drip off and then place on a cooling rack or parchment paper until ready to serve.
